Thanks to the much-needed rain (though we wished it could have paused on Saturday morning), our farmers’ tables will be overflowing with gorgeous fruits and vegetables. With more sizzling temperatures in the offing, it makes sense to stop by the market early and stock up for the week, then put your picnic together and head for the water.
This super-simple recipe for sweet corn salad caught our attention, with its colorful mix of corn, cherry tomatoes, cucumber, cheese, egg and bread (okay, the glass of wine looks pretty good, too). Almost all the ingredients can be found at the market, and you could substitute some smoked bluefish or mussels from the Local Catch for that salami.

Enjoyful Foods returns this week with Sandra’s delicious cocoa mixtures. Try a great afternoon pick-me-up on these hot days: make your own healthy iced mocha by adding the cocoa to some coffee (Bolt Coffee has some wonderful beans that work well for cold brew), add the dairy of your choice (almond milk is great for this) and chill with ice cubes. Spice it up with some cayenne, a splash of vanilla or a sprig of mint. Sip, relax, and feel the energy flow back.
